How to cut a tank to proof

In your tanks status screen, scroll to the far left in the grid and select "Cut."

The system will generate the current proof at 60 degrees (100). Input the proof you want the item to become. For example, 80 proof.

Scroll down and hit "Calculate."

This will generate the quantity of water that will need to be added to reach your proof goal.

So, for my current 900 proof gallons, I will need to add 1914.8 lbs of water (or 229.4 gallons) to take this from 100 proof down to 80 proof.

Lastly, insert your observed proof and temperature so that true proof can be calculated. Change your date and time and "apply proof cut."

FAQ:

**On the Tank Screen, when do I use: Log | Update | Adjust | Move | Cut | Batch Details**

Log - Shows you a complete history of the tank including what was entered, removed, or adjusted in that tank. Update - Use this link to Change the Internal Spirit Type, Set an Anticipated Use to a Product Master, Update the Proof (Without Changing the Proof Gallons), and Change the Account (Like Move from Storage to Processing Bulk). Adjust - Manually gauge the tank to adjust the Proof Gallons in the Tank and Report a Gain or Loss. Move - Move some or all of the Proof Gallons in one tank to another tank inside the SAME account. Cut - Auto-populates the Proof to Cut Tool with the Tank data. Enter in a Desired Proof and it will estimate how much water to add. Return back to Tank Status screen to Manually Update the Tank with the new Proof. Batch Details - Allows you to log special notes or details about the tank.

**I added water to my tank to decrease the proof or the proof in my tank has changed. How do I update the tank proof without changing the Proof Gallons or re-gauging the tank?**

For the tank you want to Update the Proof, Click "Update" and change the Proof. ONLY use "Adjust" if you need to manually adjust the Proof Gallons and re-gauge the tank. Manual Adjustments to a tank will be reported as Losses or Gains on the TTB Reports.

**How does Whiskey Systems calculate True Proof?**

We have meticulously typed many of the gauging manual tables including Table 1 (True Proof). The system will interpolate to find the true proof based on the TTB's instruction. Here is more information on gauging that all distillers should be aware of: Gauging Manual.
